Cherry Sour
Adapted from a recipe from Shaun Byrne & Gilles Lapalus's Book of Vermouth, the cherry sour is a dainty sophiscated concoction, which is worth dressing up for.
Ingredients
This classic sweet & sour combo is made using:
30ml freshly squeezed lemon juice
15ml egg white
10ml of mascerated cherry juice (adjust depending on cherries used)*
Mascerated cherries
How to make
Pre-chill coupe style glasses in freezer or by filling with ice
Combine No.2 Camille Red Vermouth, lemon juice, egg white & cherry juice in cocktail shaker with ice
Shake vigorously until shaker too cold to hold
Strain in pre-chilled coupe glass
Garnish with the mascerated cherries
*The cherry 'juice' is key to this cocktail. We used Jack Rudy cocktail co's Bourbon Cocktail Cherries, named after a daredevil pilot & bon vivant, who built a
houseboat out of an old city bus. The more easily available Opies's Black Cherries in Kirsch or Luxardo S.p.A.'s Original Maraschino Cherrries both work here too.
